Remember when you were a kid and the highest honor was to have your stuff on display "on the fridge?" Well, I have a stainless steel fridge and I cannot stick anything on it so this is my substitute, here I will display many things I am proud of and my "to do" lists as well. Enjoy!

Winter Cupcakes
I found "edible snowflakes" at Joann's and decided they were a must! So I instantly knew I was going to make cupcakes with them for our family Christmas dinner at my Mother in laws house. Below is the picture. I didn't really do anything special, I literally did these "semi-homemade" sytle! Box cake mix, purchased the blue cupcake papers at Target and a canned frosting. What I DID do was sift powdered sugar and add some vanilla, almond extract and some butter to the canned frosting so it would have more of a smooth, homemade flavor. (I cheated!) After the cupcakes were baked and cooled I put the frosting into my handy dandy Pampered Chef Easy Accent Decorator and went to town! My five year old helped me by putting the snowflakes on and then I dusted with the baby blue disco dust...these were a hit!

Baby Blanket Cupcakes
So a co worker is having a baby shower this Saturday and I wanted to make something inexpensive and yet CUTE! I wanted to find a cleaver way to give a simple gift so I scowered the internet to find ideas. I thought of diaper cakes and wreaths and then found washcloth suckers and suckers made of blankets but the thing I loved the most were the blanket cupcakes. I found a few blogs that had different instructions and in the end I had to adapt the folding a bit to get the effect and size that I wanted.
I started by purchasing a 4pk of blankets, coffee filters, ribbon, a cake box with a window and the red filler for the bottom of the box as well as stickers to decorate the outside of the box.
I dont know how but I ended up with an "all star all american boy" kinda theme but anyone who knows me knows Im crazy for the "red white and blue!"
So it took me SEVERAL tries to figure out how to fold the blankets. I finally ended up folding the blankets into big triangles and then just kept folding in half till I reached a size of aprox 2.5 inches...then I rolled. I LOVED the way the pattern came out on the blanket once in the filter. I secured with a rubber band then tied the ribbon around and put in the box. Once I figured out how I wanted the blankets folded, this entire project tooke me 15 mins. I love the way it turned out. I would love to do one for a girl!

Irish Car Bomb Cupcakes
When hubby and I finally decided to host a super bowl party, I went on the prowl for an awesome cupcake to serve! I wanted something that was "manly" and GOOD! I found a few recipes online and settled on this one from Annie's Eats. I love the cake and the ganache but the frosting is VERY sweet and I just do not like the grainy texture. I did NOT use as much Bailey's as it called for in the frosting. I did add a bit more powdered sugar and about 4 more tablespoons of butter. I also added a few tablespoons of milk and just a splash of vanilla. I'm "happy" with the frosting but next time will use my Grandmother's recipe and substitute the almond for the Bailey's.

Semi-homemade cupcakes
Tomorrow night is my son's last tee ball game and there will be a pizza party after the game for medals and certificates. I volunteered to bring/make cupcakes and realized I am limited time and in this heat I do NOT feel like baking! I ended up at Sam's Club asking for a box of white cupcakes with white butter cream frosting. I called up my brother and asked for his two cents and together this is what we came up with:

EDWARD?!?!?!
Okay so we know vampires don't "eat" per say but I think Edward tasted every cupcake in my fridge for this Sunday's Twilight party!
Just jokes....
I baked red velvet cupcakes and made my own cream cheese frosting. This frosting is sooo yum! It is very simple too. 2-8oz boxes of cream cheese 1/2 C of butter, 1 tsp of vanilla and 2 C sifted powdered sugar. You cream the butter and cream cheese together then add the vanilla then gradually add the powdered sugar! Its so smooth and creamy!!!
I dusted the cupcakes with "disco dust" that I found at my local cake/candy supply store. My cupcakes sparkle just like Edward!

Andrade 60th Wedding Anniversary (Reyes/Agnes)
My mother in law enlisted me to help her with her parents 60th wedding anniversary. After discussion over theme, colors, etc... I decided instead of a cake, I would do cupcakes and just "Tamify" them. I found the gold sugar sprinkles at a local baking supply store that I frequent called Sweet Mercantile. I found the cupcake wrappers HERE and I bought the cupcakes at Sam's Club. Here is how they turned out:
**Note; the cupcake wrappers are reversible so I put the polka-dots on the chocolate ones and the "Happy Anniversary" on the white.
When a "theme" was being discussed, I threw out the idea of family photos on the tables. This is what my Sister In Law came up with and my Step Daughter did the money tree. They both did a great job in making the idea much better then I could or would have done. Thanks Amber and Jackie!!!
